Bacon and Chive muffins

List of Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tsp salt
- 1 Tbsp baking powder
- 2 large eggs, lightly beaten
- 1¼ cups whole milk
- 3 Tbsp warm bacon fat
- ¼ cup chopped cooked bacon
- 2 Tbsp fresh chives
Instructions
- Preheat oven to 425° F. Spray a 12-cup muffin pan with nonstick cooking spray. Place in oven for 3 to 4 minutes while oven heats.
- In a large bowl, sift together cornmeal, flour, salt, and baking powder. Add eggs, milk, and bacon fat, stirring well to combine. Add bacon and chives, stirring well.
- Fill prepared muffin cups three-quarters full. Bake until golden brown, 15 to 20 minutes.
Makes 12 muffins.
