Breakfast Banana Spice Bread

- 3/4 cup chopped pecans
- 1/2 cup brewed coffee, warm or cold
- 2-3/4 cups flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 3/4 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 1/4 tsp ground allspice
- 3/4 cup granulated sugar
- 1/2 cup packed dark or light brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 2 medium-size ripe bananas, peeled and mashed
- 1/2 cup buttermilk
Instructions
- Spray a 9x5-inch loaf pan with cooking spray (or line the bottom of the pan with a piece of parchment paper cut to fit). Spray again with cooking spray. Set aside. Preheat oven to 350 degrees (F).
- Toast the pecans in a dry skillet over medium heat until fragrant, about 5 minutes. Set aside to cool.
- Sift together the flour, baking powder, soda, salt, nutmeg, cinnamon and allspice. Set aside.
- In a large bowl, beat together the granulated and brown sugars, oil, eggs and vanilla until light and creamy, about 2 minutes. Add the dry ingredients, beating just to blend. Then add the coffee, bananas and buttermilk all at once. Beat just until blended. Stir in the pecans.
- Transfer the batter to the prepared pan. Bake about 1 hour. A toothpick inserted into the center of the loaf should come out clean. Let the bread cool on a rack for 10 minutes before removing from the pan. Let cool completely before slicing.
Makes one 9x5-inch loaf.
Final Comments
Alternatively, you can use 4 (5-1/2 x 3-1/2-inch) mini loaf pans instead of the single 9x5-inch loaf pan. If you do, test for doneness at 40 to 45 minutes, instead of an hour.
