Chocolate Banana Bread

List of Ingredients
- 1-1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/4 cup alkalized cocoa powder
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 6 ounces 70% bittersweet chocolate, finely chopped
Instructions
- Position rack in center of oven and preheat to 350 degrees (F). Butter bottom and sides of a 9x5-inch loaf pan.
- In medium bowl, sift together flour, baking soda and cocoa powder. Stir to combine.
- In bowl of electric mixer, using paddle attachment, beat butter and sugar at medium-high speed until light -- about 2 minutes. Beat in eggs one at a time, beating well after each addition and scraping down sides of bowl as necessary. Add bananas and vanilla extract at low speed, mixing until combined. Add flour mixture in three additions, alternating it with sour cream in two additions. Add chocolate and blend just for a few seconds. Scrape batter into prepared pan and smooth top.
- Bake for 55 to 60 minutes, until toothpick inserted in center of cake comes out clean (except for any melted chocolate it might have on it). Cool in pan set on wire rack for 15 minutes. Unmold and cool completely.
Makes 8 servings.
