Country White Bread

Recipe Introduction
"Everyone loves a good slice of homemade bread, especially when it's spread with butter of jam. These loaves are especially nice because the crust stays tender. My husband makes most of the bread at our house, and this recipe is his favorite."
List of Ingredients
◦ 2 packages ( ounce) active dry yeast
◦ 2 cups warm water (105 to 115 F)
◦ cup sugar
◦ 2 teaspoons salt
◦ 2 large eggs, room temperature
◦ cup canola oil
◦ 6 to 7cups all-purpose flour
Recipe
In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, oil, and 3 cups flour; beat on medium speed until smooth. Stir in enough of the remaining flour to form a soft dough.
Turn out onto a floured surface; knead until smooth and elastic, 6 to 8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about one hour.
Punch down dough. Divide in half and shape each half into a loaf. Place in two greased 9 x 5-inch loaf pans. Cover with kitchen towels; let rise in a warm place until doubled, about one hour.
Bake at 375 F until golden brown, 25 to 30 minutes.
Remove from pans to wire racks to cool.
Makes 2 loaves
(16 pieces each)
❧ Herbed Country White Bread:
Along with the 3 cups of flour, stir in 2 tablespoons dried parsley flakes, 1 tablespoon dried basil, 1 teaspoon each dried oregano and thyme, and teaspoon garlic powder.
