Jalapeño Buttermilk Cheese Biscuits

- 2 cups self-rising flour
- 1 tsp baking soda
- 2 Tbsp chilled vegetable shortening
- 1 cup Monterey jack cheese
- 1 jalapeño chile, diced
- 1 large clove garlic, minced
- 3/4 cup buttermilk
- 1 large egg, beaten
- 2 Tbsp butter, melted
Instructions
- Preheat oven to 425º F. Grease a large baking sheet and set aside.
- In a large mixing bowl, whisk together the flour and baking soda. Add the shortening and cut it into the flour with a pastry cutter until the mixture is crumbly. Add the cheese, chile and garlic, and stir until well blended. Add the buttermilk and beaten egg and stir until the dough is blended but still slightly wet.
- Drop the dough by rounded tablespoons onto the prepared baking sheet about 1 inch apart, and bake in the upper third of the oven until golden brown, 12 to 15 minutes. Brush the biscuits with melted butter and serve warm.
Makes at least 16 biscuits.
