"Created by my friend Bobbie Edwards, this quick bread is similar to an Irish brown bread. It's savory — not sweet — and incredibly versatile. Try it toasted for breakfast, spread with butter or honey, or with herbed cream cheese topped with smoked salmon. Or use it to make open-faced sandwiches."

â—¦ 3 ½ cups whole-wheat flour
â—¦ 1 cup all-purpose flour
â—¦ 2 teaspoons salt
â—¦ 1 tablespoon baking soda
â—¦ 1 large egg
â—¦ ½ cup sugar
â—¦ ¾ cup molasses
â—¦ 3 cups buttermilk
Recipe
Preheat the oven to 375 degrees.
Grease and lightly flour two 9 x 5 x 3-inch loaf pans and set aside.
Mix the whole-wheat flour, all-purpose flour, salt, and baking soda in a large bowl. Whisk the egg, sugar, molasses, and buttermilk in a separate bowl until well blended.
Add the egg mixture to the flour mixture and stir to blend well. Pour the mixture evenly into the prepared pans.
Bake 45 to 50 minutes, until a toothpick inserted in the center of the loaf comes out clean. Let rest for 10 to 15 minutes before removing from the pans. Serve warm or place on a baking rack to cool.
Makes two 9 x 5-inch loaves
