Olympic Mountain Bread with Washington Apples

- 4 large eggs
- 2 cups sugar
- 1/2 cup buttermilk
- 1/2 cup mayonnaise
- 1 tsp vanilla
- 3-1/2 cups all-purpose flour
- 1/4 tsp salt (optional)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 2 medium tart green Washington apples
- 1 cup raisins
- 1 cup chopped walnuts
Instructions
- In a large bowl, beat eggs, sugar, buttermilk, mayonnaise and vanilla until smooth. In another bowl, mix flour, salt, baking powder, baking soda and cinnamon. Add to egg mixture and stir until just combined.
- Core apples and chop. Add to batter with raisins and nuts; stir just to mix. Spread batter evenly in two greased and floured 5x9-inch loaf pans.
- Bake in a 375-degree (F) oven until a wooden pick inserted in the center comes out clean in about 1 hour and 20 minutes. Let bread cool in pans about 10 minutes, then turn onto a rack to cool completely.
Makes 2 loaves,
about 1-3/4 lbs. each.
