Palisade Peach Bread

List of Ingredients
- 3 cups fresh peaches, peeled and sliced
- 6 Tbsp sugar
- 2-1/2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1 to 1-1/2 cups sugar
- 1/2 cup butter or margarine
- 2 eggs
- 1 cup pecans, finely chopped
- 1 tsp vanilla extract
Instructions
- Puree the peaches and 6 tablespoons sugar in a blender.
- Combine the flour, baking powder, soda, salt and cinnamon; set aside.
- Combine the remaining sugar and butter with an electric mixer until creamy. Add eggs and mix again. Add peach puree and the dry ingredients, mixing until all ingredients are well-combined. Stir in the pecans and vanilla extract.
- Pour batter into 2 greased and floured 9x5x3-inch bread pans. Bake in a preheated 325-degree oven for 55 or 60 minutes.
Yield: 2 loaves

Don't hesitate to use very ripe peaches for this recipe.
This bread freezes well for those winter mornings when you need a reminder of summer's peach harvest.
