Pepper Jack Bread

- 6 cups all-purpose flour
- 2 Tbsp baking powder
- 2 tsp salt
- 2 cups shredded pepper Jack cheese
- 2 cups shredded sharp Cheddar cheese, divided
- 2 cups whole milk
- 2 large eggs, beaten
- 6 Tbsp melted butter
- 1 cup sour cream
- 1 (14.5-ounce) can diced green chiles, drained
- 1 (14.5-ounce) can fire-roasted diced tomatoes, drained
Instructions
- Preheat oven to 350° F. Lightly spray two 10-inch loaf pans with nonstick cooking spray.
- In a large bowl, sift together flour, baking powder, salt. Add pepper Jack and 1 cup Cheddar to flour mixture. Toss to coat. Add milk, eggs, and melted butter to flour mixture, stirring well to combine. Add sour cream, chiles, and tomatoes. Stir well to combine. Stir well to combine. Divide batter between prepared pans. Sprinkle batter with remaining 1 cup Cheddar cheese.
- Bake until a wooden pick inserted in the center comes out clean, approximately 50 minutes. Let cool in pans for 30 minutes. Remove from pans, and let cool completely on a wire rack.
Makes two 10-inch loaves.
