Quick Non-Amish Bread

List of Ingredients
- 2 cups flour
- 1 Tbsp baking powder
- 1 tsp salt
- 1/2 cup oil or melted butter
- 1/2 cup sugar
- 2 eggs
- 1 cup milk
- 1 tsp vanilla extract
- 1 cup nuts, optional
Instructions
- Butter a loaf pan or a tube cake pan, then sprinkle the buttered pan with flour and shake out the excess.
- In one mixing bowl, whisk together the flour, baking powder and salt. In another mixing bowl, whisk the oil or melted butter, sugar and eggs until smooth, then stir in the milk and vanilla. Add the milk mixture all at once to the dry ingredients and stir briefly, just until the mixture comes together to make a batter; do not over-mix. Fold in nuts, if desired.
- Transfer the batter to the prepared pan and bake for 55 minutes in an oven heated to 350º F. Cool on a rack for 10 minutes, then turn it out of the pan.
Makes 1 loaf.

VARIATIONS
• Muffins:
Bake the batter in greased and floured muffin tins for 12 to 15 minutes.
• Banana Bread:
Replace the milk with 1-1/2 cups mashed bananas and replace the baking powder with 1-1/2 teaspoons baking soda.
• Blueberry Coffee Cake:
Use a cake pan instead of a loaf pan. Add 1 cup fresh or frozen blueberries to the batter. Combine 1/2 cup flour, 1/2 cup brown sugar, 1/4 cup butter and 1 teaspoon cinnamon, and crumble the mixture over the batter just before baking.
