List of Ingredients
- 4½ cups all-purpose flour
- 2/3 cup sugar
- 4½ tsp baking powder
- 1½ tsp baking soda
- 1½ tsp salt
- 3 cups buttermilk
- 3 large eggs, lightly beaten
- 4½ Tbsp butter, melted
Instructions
- Preheat oven to 350° F.
- Whisk together first five ingredients in a large bowl.
Make a well in the center of the mixture. Add buttermilk, eggs, and butter, whisking just until thoroughly blended. (Batter should be almost smooth.) Pour batter into two lightly greased 8½- x 4½-inch loaf pans.
- Bake at 350° for 45 minutes.
Rotate pans in oven, and shield with aluminum foil. Bake 30 to 35 minutes, or until a long wooden pick inserted in center comes out clean. Cool in pans on a wire rack 10 minutes. Carefully run a knife along edges of bread to loosen from pans. Remove pans to wire rack, and cool completely, about one hour.
Makes two loaves.
Final Comments
"Southern Soda Bread is a twist on the Irish classic.
Serve it warm from the oven with a cup of tea, or to accompany a meal. We especially love it toasted and served with jam or honey butter."
