List of Ingredients
- 2 cups all-purpose flour
- 1½ Tbsp granulated sugar
- 1 Tbsp baking powder
- 1 tsp salt
- ½ cup (1 stick) unsalted butter, cut into small chunks
- ¾ cup light cream
Instructions
- Preheat the oven to 425° F.
- Sift the flour, sugar, baking powder and salt into a large bowl. Gently rub in the butter, using your fingertips, until well incorporated. Add the cream and gently bring the dough together with a metal spatula or fork. Work the dough gently into a ball and knead briefly on a floured board.
- Roll out the dough into a flat disk about ¼-inch thick. Cut out 2½- to 3-inch rounds with a floured cookie cutter and place on an ungreased baking sheet. Bake for 10 to 12 minutes, or until golden. Serve immediately.
Makes 8 to 10 biscuits.
Final Comments
"These biscuits are great for breakfast, served with plenty of butter and honey. You can also serve them at teatime with preserves or with supper to accompany a bowl of hot chile con carne. Gentle handling is the secret to making them. The crisp top provides a sharp contrast to the creamy white, almost silky interior. The biscuits should literally melt in your mouth."
