Sweet Potato Rolls

"Since Cade is obsessed with sweet potatoes, we had no choice but to experiment until we found the best sweet potato roll variation. Yes, the rolls will look slightly orange, which we find kind of beautiful, but the flavor is amazing, and these babies are soft and fluffy."
List of Ingredients
° â…” cup milk
° 5 Tbsp unsalted butter, diced
° 3 Tbsp granulated sugar
° 1 tsp dry active yeast
° 2¾ cups bread flour
° 1½ tsp kosher salt (or ¾ tsp sea salt)
° 1 tsp vital wheat gluten
° 1 sweet potato, baked, skin removed, and mashed (1 cup)
° 1 large egg with 1½ tsp egg white removed
° Butter for tops after baking
Recipe
In a large glass measuring cup, heat milk in the microwave on high power for 90 seconds. Remove from microwave, add diced butter, and stir until butter is melted. Once mixture is warm but not hot, add the sugar and yeast and set aside.
In the bowl of a stand mixer equipped with the paddle attachment, add the flour and salt. On the side of the bowl opposite the salt, add the vital wheat gluten and mix on low.
Add the yeast mixture, mashed sweet potato, and egg. Mix again just until the dough comes together and then switch to the dough hook and mix for 90 seconds.
Drape a light towel or plastic wrap over the bowl and allow dough to rise 1 to 2 hours.
Sprinkle the counter lightly with flour and turn out the very soft dough. Sprinkle the top of the dough with a little more flour and roll out into a ¼-inch thick rectangle. Starting at the end closest to you, tightly roll the dough into a log. Cut dough into 2-inch pieces and use the palm of your hand to gently roll each piece of dough into a very round ball. Place on a greased cookie sheet, cover with a clean towel, and allow to rise 1 to 2 hours, until doubled in size.
Heat the oven to 350° F and bake 18 to 20 minutes. Quickly brush the tops with more butter and serve warm.
Makes 16 to 20 rolls
Note:
Vital wheat gluten can be found in the baking section of your grocery store. It can be omitted, if needed.
