    Sweet Potato Spice Bread

    Recipe Introduction

    "It's a good thing this recipe makes two mini loaves because they'll go fast. For a small household, eat one loaf now and freeze the other for later."

    List of Ingredients

    â—¦ 1 cup all-purpose flour
    â—¦ 1½ tsp baking powder
    â—¦ ¼ tsp each: ground cinnamon, nutmeg and allspice
    â—¦ â…› tsp salt
    â—¦ 1 large egg, room temperature
    â—¦ â…“ cup mashed sweet potato
    â—¦ â…“ cup honey
    â—¦ 3 Tbsp canola oil
    â—¦ â…“ cup chopped walnuts

    Recipe

    In a small bowl, combine the flour, baking powder, spices and salt.

    In another small bowl, whisk the egg, sweet potato, honey, oil and molasses. Stir into dry ingredients just until moistened. Fold in walnuts.

    Transfer to two 5¾x3x2-inch loaf pans coated with cooking spray. Bake at 325°F for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.


    Makes 2 mini loaves
    (6 slices each)
