Burgundy Burgers with Roquefort

List of Ingredients
- 8 lbs. ground beef chuck
- 1 cup chopped parsley
- 1 cup chopped green onion
- 2-1/2 Tbsp salt
- 1/2 tsp pepper
- 1 bottle red wine
- 24 squares Roquefort or blue cheese
- 24 sesame buns, split
- Toppings: sweet onions, butter lettuce leaves, thick-sliced tomato
Instructions
- Mix together the ground chuck, parsley, and the green onion; season with salt and pepper. Shape into 24 patties, making a depression in the center of each one. Place in a shallow pan and pour wine over patties, pouring into the depressions. Chill 2 hours or longer.
- Remove patties from marinade and broil over medium-hot coals for 8 to 10 minutes (for medium-rare), or to desired degree of doneness. Place a small square of Roquefort on each meat patty just before serving so it will melt slightly.
- Serve on sesame buns with condiments of your choice, and toppings.
