    Burgundy Burgers with Roquefort

    List of Ingredients


    • 8 lbs. ground beef chuck
    • 1 cup chopped parsley
    • 1 cup chopped green onion
    • 2-1/2 Tbsp salt
    • 1/2 tsp pepper
    • 1 bottle red wine
    • 24 squares Roquefort or blue cheese
    • 24 sesame buns, split
    • Toppings: sweet onions, butter lettuce leaves, thick-sliced tomato


    Instructions


    1. Mix together the ground chuck, parsley, and the green onion; season with salt and pepper. Shape into 24 patties, making a depression in the center of each one. Place in a shallow pan and pour wine over patties, pouring into the depressions. Chill 2 hours or longer.

    2. Remove patties from marinade and broil over medium-hot coals for 8 to 10 minutes (for medium-rare), or to desired degree of doneness. Place a small square of Roquefort on each meat patty just before serving so it will melt slightly.

    3. Serve on sesame buns with condiments of your choice, and toppings.
