Cheeseburgers in Paradise with Paradise Island Dressing

List of Ingredients
- 1½ pounds ground beef
- 1 Tbsp Margaritaville House Spice Blend (recipe follows)
- 2 Tbsp neutral oil (such as canola or vegetable), for frying
- 8 slices cheese (such as American)
- ½ cup Paradise Island Dressing (recipe follows)
- 4 burger buns, split and lightly toasted
- 2 cups shredded iceberg lettuce
- 8 large tomato slices
- Dill pickle slices, for serving
Instructions
- Divide the ground beef into four even portions and shape each into a patty. Sprinkle both sides of each burger with some of the spice blend.
- Place the oil in a large cast-iron skillet that can hold the burgers in a single layer (or work in batches or use two skillets). Set the skillet over high heat and turn your exhaust fan on. Once the skillet is smoking hot, place the burgers in the skillet and cook until the undersides are nicely browned, 2 to 3 minutes. Carefully turn the burgers and top each one with two slices of the cheese. Cook until the second sides are nicely browned and the cheese has melted, 2 to 4 minutes more.
- Divide the Paradise Island Dressing between the cut sides of the buns and spread to cover. Put ½ cup of the shredded lettuce on the bottom half of each bun and top with a cheeseburger. Top each cheeseburger with a couple slices of tomato. Top with the top buns and then close the burgers. Serve immediately with pickle slices alongside.

Margaritaville House Spice Blend
• 2 Tbsp onion powder
• 2 Tbsp garlic powder
• 1 Tbsp kosher salt
• 1 Tbsp ground cumin
Place all the ingredients in a bowl and whisk together.

Paradise Island Dressing
• ½ cup mayonnaise
• ¼ cup ketchup
• 2 Tbsp pickle relish
• 2 Tbsp fresh lime juice, plus more if needed
• ½ tsp kosher salt, plus more if needed
Place all the ingredients together in a large bowl and whisk together. Taste for seasoning and add more lime and/or salt as needed.
