Sauce:
â—¦ ½ cup plain Greek yogurt
â—¦ 2 teaspoons fresh lime juice
â—¦ ½ teaspoon red curry paste
â—¦ ¼ teaspoon kosher salt
â—¦ 1 clove garlic, minced or pushed through a press
â—¦ 2 teaspoons curry powder
â—¦ 1 teaspoon kosher salt
â—¦ ½ teaspoon freshly ground black pepper
â—¦ 2 tablespoons extra-virgin olive oil
â—¦ 2 sweet potatoes, about 2 pounds total, peeled and ends trimmed
Recipe
Prepare the grill for direct cooking over medium heat (350° to 450° F) and preheat a perforated grill pan.
Whisk the sauce ingredients.
In a large bowl, combine the curry powder, salt, and pepper. Stir in the oil. Cut the potatoes into 4-by-½-by-½-inch sticks (discard any uneven pieces, as they would burn easily). Put the potatoes in the bowl with the oil and spices, and turn to coat evenly.
Spread the potatoes in a single layer on the grill pan and grill over direct medium heat, with the lid closed, until tender, 10 to 15 minutes, turning every few minutes to brown all sides.
Serve the fries warm with spicy yogurt sauce.
