Essentials: Tzatziki Sauce

List of Ingredients
- ½ English cucumber, coarsely grated on the large holes of a box grater
- 1 cup plain Greek yogurt
- 2 tablespoons finely chopped fresh mint leaves
- 1 tablespoon fresh lemon juice
- 2 teaspoons extra-virgin olive oil
- 1 medium clove garlic, minced or pushed through a press
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Instructions
- Place the grated cucumber in a strainer and press firmly to squeeze out the excess liquid. Discard the liquid.
- Transfer the cucumber to a small bowl.
Add the remaining ingredients and stir to combine. Serve; or cover and refrigerate for up to four hours.
Makes about 1 ½ cups
