Hot 'n' Spicy Burgers

List of Ingredients
- 1 lb. lean ground beef
- 1-1/2 tsp seeded, chopped jalapeno pepper
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/4 cup shredded Monterey Jack cheese
- 4 thin tomato slices
- 4 hamburger buns, split and toasted
- Condiments: barbecue sauce, salsa-style catsup, salad dressing, or gourmet mustard
- Toppings: sprouts, bell peppers, sliced cucumbers, Cheddar cheese, or smoked gouda
Instructions
- In a medium bowl, combine ground beef, jalapeno pepper, cumin, salt, and pepper, mixing lightly but thoroughly. Shape into 4 (1/2-inch-thick) patties. For the juiciest burgers, handle ground beef as little as possible when shaping into patties.
- Place patties on grid over medium coals. Grill 7 to 8 minutes or until no longer pink and juices run clear, turning once (don't be tempted to flatten burgers with a spatula, as this forces out flavorful juices). Sprinkle 1 tablespoon shredded Monterey Jack cheese on each burger 1 minute before end of cooking time.
- Spread toasted buns with condiments of choice, place tomato slice on bottom half of each bun; top with each burger and desired toppings. Close with top half of bun.
Makes 4 servings.
