Southwest Burger

- 3 large poblano chiles
- 1 1/4 lbs. lean ground beef
- 1/4 cup chopped fresh cilantro
- 2 Tbsp coarsely grated onion
- 1 tsp salt
- 1/2 tsp freshly ground pepper
- 1/4 lb. Monterey Jack cheese, sliced
- Salsa or catsup (optional)
- 4 kaiser rolls, toasted
Instructions
- Heat broiler. Place chiles on a foil-lined cookie sheet. Broil 3 inches from heat 10 to 15 minutes, turning occasionally, until skins are bubbly and evenly charred. Immediately transfer chiles to a large resealable plastic storage bag and seal. Let stand 10 to 15 minutes until chiles are cool enough to handle. Remove skins from chiles, seed, and cut into strips.
- Meanwhile, toss ground beef with cilantro, onion, salt, and pepper; shape into four 1/2-inch-thick patties.
- Heat grill pan or cast-iron skillet. Grill patties 5 to 6 minutes per side, until an instant-read thermometer inserted into side of burger registers 160 degrees F (for medium).
- Top each burger with cheese; remove from heat. Cover pan and let stand 1 minute until cheese is melted.
- To serve: Place burgers, chile strips and salsa (if desired), on bottom half of rolls; add top half of rolls.
