Two Pepper Burgers

- 1/2 cup mayonnaise
- 1/2 to 1 chipotle pepper in adobo sauce, finely chopped
- 1/3 cup finely chopped onions
- 4 cloves garlic, minced
- 3 to 5 fresh jalapeno peppers, seeded and finely chopped
- 2 tsp Cajun or Creole seasoning
- 1-1/2 lbs. ground beef
- 4 ounces Monterey Jack cheese, sliced
- 6 hamburger buns, split and toasted
Instructions
- Combine mayonnaise and chipotle pepper. Cover and chill.
- In large bowl, combine onions, garlic, jalapeno peppers, and Cajun seasoning. Add ground beef. Mix well. Shape into 6 (4" thick) patties.
- Place patties on unheated rack of broiler pan. Broil 4 to 5 inches from heat for 12 to 14 minutes, or until done at 160 degrees, turning once. Top with cheese. Broil for 30 seconds, or until cheese melts.
- Spread each bun with mayonnaise-chipotle mixture; top with burgers and replace with top half of bun.
Makes 6 burgers.
