Butter: Herb Butter for Turkey

- 4 Tbsp unsalted butter, softened
- 1 tsp minced orange zest
- 1 Tbsp fresh orange juice
- 1 tsp minced fresh rosemary
- 1 tsp minced fresh sage
- 1 tsp minced fresh thyme leaves
- ¼ tsp kosher salt (if turkey was not brined)
- Freshly ground black pepper
Instructions
- Put the softened butter in a small bowl and whisk in the orange zest and juice. Add rosemary, sage, thyme, salt (if using) and several grinds of black pepper. Cover and refrigerate. Remove from refrigerator about 30 minutes before using.
How to Use:
With your fingers, loosen the skin covering the turkey breast. Spread some of the butter onto the meat under the skin; replace skin. Use remaining butter for basting.
Makes about 4 tablespoons.
