    Spread: Roasted Garlic and Brie Spread

    List of Ingredients


    • 1 whole head of garlic
    • 1 Tbsp olive oil
    • 1/8 tsp cayenne pepper
    • 1/2 lb. brie cheese


    Instructions


    1. Wrap the garlic in a piece of foil and bake in a preheated 300-degree oven for 1 hour. Let cool slightly and press the softened garlic out of the skins into a food processor. Puree with the olive oil and cayenne pepper.

    2. Remove the rind from the brie cheese with a sharp knife. Put the cheese into the top of a double boiler and place over hot water to soften. Do not let the water boil or the cheese will become stringy.

    3. Transfer the cheese to the food processor and puree until smooth. Scrape into a small bowl, cover and refrigerate. Bring the spread back to room temperature before serving.

      Serve with crackers or thinly sliced and toasted French bread.
