Catfish Gumbo

List of Ingredients
- 1/2 cup vegetable oil
- 1/2 cup flour
- 4 garlic cloves
- 2 cups chopped onions
- 1 cup chopped celery
- 1 cup chopped green bell pepper
- 5 cups chicken stock
- 1/2 tsp cayenne pepper (or to taste)
- Salt and pepper, to taste
- 2 bay leaves
- 1 lb. sliced, smoked sausage (Andouille or Kielbasa, whatever you have on hand)
- 6 catfish fillets, cleaned and chopped
- Hot pepper sauce (optional)
Instructions
- Make a roux with the oil and flour, browning it slowly and stirring frequently. Cook over medium heat for about 30 minutes until it is a rich milk chocolate color (frequent stirring is a must). When the roux is just right, add the garlic, onions, celery, and green pepper, stirring vigorously. Cook 2 to 3 minutes. Lower heat (to low setting) and cook 15 to 20 minutes, stirring occasionally.
- Add the remaining ingredients and simmer for one hour or more. Stir occasionally.
- Taste for seasonings and add salt and pepper, if desired.
Serve over hot cooked rice in soup bowls.
Yield: 3 quarts
