Delta Queen Bread Pudding

List of Ingredients
◦ 3 eggs
◦ 1 cups sugar
◦ cup ( stick) unsalted butter, melted
◦ 1 tablespoon ground cinnamon
◦ 1 teaspoon ground nutmeg
◦ 2 cups heavy cream
◦ 1 teaspoons vanilla extract
◦ cup coarsely chopped pecans, roasted
◦ cup raisins
◦ 5 cups French bread cubes, dried for 5 minutes in a 325-degree oven
◦ 2 cups Bourbon Sauce (recipe follows)
Recipe
Break eggs into a mixing bowl and beat until frothy. Beat in sugar, butter, cinnamon, and nutmeg. Beat in cream and vanilla.
Add pecans and raisins, and mix gently.
Place bread cubes in a lightly oiled 11 by 7-inch baking pan. Pour egg mixture over bread and mix well. Let sit 30 minutes, occasionally stirring so all of the bread is fully soaked.
Preheat oven to 325 F.
Bake 45 minutes or until pudding is puffy and brown. To serve, cut into squares and top with bourbon sauce.
Makes 8 servings
❧ Bourbon Sauce:
◦ 1 cup (2 sticks) butter
◦ 1 pound (2 packed cups) dark brown sugar
◦ 1 cup heavy cream
◦ cup bourbon
Melt butter in a medium saucepan over medium heat. Add brown sugar and blend well. Stir in cream and bring to a boil.
Reduce heat and stir in bourbon.
Makes 3 cups
