List of Ingredients
- Cooking oil
- 3 cups okra, sliced into 1-inch slices
- 2 onions, thinly sliced
- 2 bell peppers, sliced in rings or half rings
- 2 cups quartered fresh tomatoes
- Salt and pepper
Instructions
- Heat oil in heavy saucepan; add okra, onions, bell peppers and tomatoes. Season with salt and pepper. Cook about 25 to 45 minutes (depending on how tender and young the okra is). Taste for seasoning.
Serves 6 to 8
Final Comments
All ingredients should still be in individual pieces and mixture should be juicy.
