Shrimp Sauce Piquant

- 5 Tbsp butter
- 2 Tbsp flour
- 1 cup chopped onions
- 4 green onions, chopped
- 1 cup chopped celery
- 4 cloves garlic, sliced
- 2 cups tomato puree
- 2 cups water
- 1 bay leaf
- 5 whole allspice, crushed
- 5 cloves
- dash of crushed red pepper
- 1 Tbsp Worcestershire sauce
- 1 slice lemon
- 1 tsp crushed thyme
- 2 Tbsp sugar
- 1 tsp salt
- 1 tsp hot pepper sauce (or to taste)
- 2 (4-1/2-oz.) cans shrimp, or like amount of fresh shrimp

- Hot cooked rice
Instructions
- Make a roux with the flour and butter, by cooking and stirring frequently until golden brown.
- Add the chopped onions, celery, and garlic. Saute until vegetables begin to brown. Add tomato puree, water, and all remaining ingredients, except pepper sauce and shrimp. Bring mixture to a boil; reduce heat to low and simmer uncovered for about an hour (sauce will be reduced by about half), stirring frequently.
- If using canned shrimp, remove from heat and add pepper sauce and shrimp. If using fresh shrimp, add the shrimp and allow to cook for a few more minutes before removing from heat and adding pepper sauce.
Serve over hot cooked rice.
