List of Ingredients
- 1 stick butter
- 2 large onions, chopped
- 1 bell pepper, chopped
- 3 fresh tomatoes, sliced
- 1 large eggplant, sliced 3/4-inch thick and soaked in cold salt water
- 2 cloves garlic, mashed
- 1 tsp salt
- 1/2 tsp Tabasco sauce
Instructions
- Melt butter over slow heat; saute onions and bell pepper. Add tomatoes and cook very slowly for about 20 minutes, stirring occasionally.
- Add eggplant, garlic, salt and hot sauce; cover and steam for about 30 minutes. Serve hot.
Makes 6 to 8 servings.
