Applesauce Spice Cake with Custard Sauce

- 3 tart apples (such as Jonathan or Winesap)
- 1/4 cup plus 1 Tbsp sweet apple cider
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1-1/4 cups flour
- 1/4 tsp salt
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground cloves
- 1 tsp ground allspice
- 1/8 tsp ground nutmeg
- 1 cup raisins
- 1 cup chopped walnuts
- 1/2 cup powdered sugar

- 1 cup milk
- 1 vanilla bean, split
- 1 cinnamon stick
- 3 egg yolks
- 2 Tbsp granulated sugar
Instructions
- Peel, core and slice the apples. Combine apple slices with 1/4 cup apple cider in a saucepan; bring to a boil, cover, reduce the heat and simmer for 20 minutes or until a chunky applesauce consistency is reached. Measure 1 cup, and cool.
- Cream butter and slowly add 1 cup sugar, beating until light. Add egg and mix well. Sift together flour, salt, baking soda, cinnamon, cloves, allspice and nutmeg; add to creamed mixture and beat to incorporate. Beat in applesauce; stir in raisins and walnuts.
- Spread into a greased and floured 9 x 5-inch loaf pan. Bake in a preheated 350º F oven for about 1 hour. Cool in the pan 10 minutes before turning out onto a rack.
- Combine powdered sugar with 1 tablespoon apple cider and stir until smooth. Brush glaze over the top and sides of the hot cake. Cool before cutting.
- To prepare the custard sauce: Heat milk with the vanilla bean and cinnamon stick over medium heat just to the boiling point. Beat egg yolks and 2 tablespoons sugar in a small bowl. Slowly add hot milk to the eggs, stirring continuously; then put the mixture back into the saucepan and cook over medium heat, again stirring constantly, until the sauce thickens. (It should never come to a boil.) Remove vanilla bean and cinnamon stick.
Slice cake and spoon the warm sauce over the top.
Makes 8 servings.
