Banana Walnut Cake

- 1 cup flour
- 1-1/2 tsp baking powder
- 1/4 tsp salt
- 4 Tbsp (1/2 stick) butter
- 1/2 cup sugar
- 1/2 tsp vanilla extract
- 1 egg
- 1 large super-ripe banana, completely brown or at least thoroughly speckled
- 1 Tbsp fresh lime juice
- 1/2 cup walnuts, chopped
Instructions
- Preheat oven to 350 degrees (F). Grease and flour an 8-inch square baking pan.
- Sift together the flour, baking powder and salt. Reserve. In a mixer, cream the butter and sugar together until light. Add the vanilla and egg, and mix until well-incorporated.
- In a small bowl, mash the banana and lime juice together with a fork. With the mixer running, add the banana mixture and mix until well-incorporated. Scrape down the sides. Add the reserved dry ingredients to the mixer and mix on low to incorporate. Add the nuts and mix well.
- Spread the mixture evenly in the prepared baking pan. Bake for 25 to 30 minutes, or until a cake tester or toothpick inserted in the center comes out clean. Remove the cake from the oven and cool in the pan for 10 minutes, then turn cake out on a rack to cool thoroughly.
Makes one (8-inch square) cake.
CHEF'S TIPS: This cake is also great made with chopped macadamia nuts instead of the walnuts. Freeze unpeeled overripe bananas when you have too many. Then just pull one out and defrost for this recipe.
