    Buttermilk Cake with Lemon Glaze

    List of Ingredients


    • 3 cups sugar
    • 1 cup shortening
    • 6 eggs, separated
    • 1 tsp butter flavoring
    • 1 tsp lemon extract
    • 3 cups flour
    • 1/4 tsp baking soda
    • 1/2 tsp salt
    • 1 tsp baking powder
    • 1 cup buttermilk
    • .
    • -- Lemon Glaze --
    • 1 egg, beaten
    • 2 Tbsp flour
    • 1/2 cup water
    • 1 cup sugar
    • Juice and rind of 2 lemons
    • 1/2 stick butter


    Instructions


    1. Preheat oven to 350° F. Cream sugar and shortening thoroughly. Add egg yolks, one at a time, beating well after each addition. Add flavorings. Sift together flour, soda, salt and baking powder 3 times. Add buttermilk and flour alternately to egg mixture. Fold in stiffly beaten egg whites.

    2. Pour batter in well-greased tube pan and bake until done, 50 to 60 minutes. Cool in pan on wire rack 15 to 20 minutes, then remove cake from pan to finish cooling.

    3. For Lemon Glaze: Combine ingredients in saucepan and cook over medium heat until mixture is a thin custard consistency. Pour over cooled cake.

      Makes 12 servings.
