Buttermilk Cake with Lemon Glaze

- 3 cups sugar
- 1 cup shortening
- 6 eggs, separated
- 1 tsp butter flavoring
- 1 tsp lemon extract
- 3 cups flour
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp baking powder
- 1 cup buttermilk

- -- Lemon Glaze --
- 1 egg, beaten
- 2 Tbsp flour
- 1/2 cup water
- 1 cup sugar
- Juice and rind of 2 lemons
- 1/2 stick butter
Instructions
- Preheat oven to 350° F. Cream sugar and shortening thoroughly. Add egg yolks, one at a time, beating well after each addition. Add flavorings. Sift together flour, soda, salt and baking powder 3 times. Add buttermilk and flour alternately to egg mixture. Fold in stiffly beaten egg whites.
- Pour batter in well-greased tube pan and bake until done, 50 to 60 minutes. Cool in pan on wire rack 15 to 20 minutes, then remove cake from pan to finish cooling.
- For Lemon Glaze: Combine ingredients in saucepan and cook over medium heat until mixture is a thin custard consistency. Pour over cooled cake.
Makes 12 servings.
