Coffee Cake: Cinnamon-Cardamom Coffee Cake

- 1/2 cup chopped walnuts
- 1-1/4 cups light brown sugar, divided
- 1-1/2 to 1-3/4 tsp true cinnamon powder
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1-1/4 tsp baking soda
- 1-1/2 to 1-3/4 tsp ground cardamom seeds
- 1/4 tsp salt
- 8 ounces butter
- 2 eggs
- 1 tsp vanilla extract
- 1 cup sour cream

- Whipped cream and toasted almond slices, optional
Instructions
- Combine walnuts, 1/4 cup brown sugar, and cinnamon; set aside.
- Sift together the flour, baking powder, soda, ground cardamom, and salt. Set aside.
- Cream the butter and 1 cup of brown sugar well until light and fluffy. Add the eggs one at a time with the vanilla and beat well.
- Add the flour mixture, alternating with sour cream, folding after each addition. Do not overmix.
- Butter and flour an 8- or 9-inch tube pan. Put a third of the batter in the pan, then half of the walnut mixture, then a third of the batter, remaining nut mixture, and the final third of the batter.
- Bake in a 350-degree oven for 50 minutes or until a skewer inserted all the way through comes out clean. Cool for about 15 minutes, then turn onto a cooling rack or plate and cool completely, at least another half hour.
If desired, serve with whipped cream and a sprinkling of toasted almond slices.
