Cupcakes: Rainbow Cupcakes

- 1 (18.25-ounce) box white cake mix
- 1¼ cups water
- 1/3 cup vegetable oil
- 2 tsp vanilla extract
- 1 (3.75-ounce) bottle colored sprinkles
- Dreamy Orange Frosting (recipe follows)

- Garnish: colored sprinkles
Instructions
- Preheat oven to 350° F. Line two 12-cup muffin pans with paper liners; set aside.
In a large bowl, combine cake mix, water and oil. Beat at medium speed with an electric mixer for 1 minute. Add vanilla and sprinkles, and beat for an additional 30 seconds. Fill each prepared muffin cup two-thirds full.
- Bake for 20 to 25 minutes, or until a wooden pick inserted in center comes out clean. Remove from oven and cool completely before frosting, approximately 20 minutes.
- Place Dreamy Orange Frosting in a pastry bag fitted with a star tip. Pipe onto cupcakes. Garnish with colored sprinkles, if desired.
Makes 24 cupcakes.

DREAMY ORANGE FROSTING
• 1 (8-ounce) package cream cheese, softened
• 5 cups confectioners' sugar
• 1 Tbsp fresh orange zest
• 2 Tbsp fresh orange juice
• 2 tsp vanilla extract
• 1 tsp orange extract
In a medium bowl, beat cream cheese at high speed with an electric mixer until smooth. Add confectioners' sugar, zest, juice and extracts, mixing until combined.
Makes 4 cups.
