French Chocolate Cake

- 6 ounces dark chocolate, broken into pieces
- 4 Tbsp unsalted butter, cut into pieces
- 3 Tbsp water
- 1/2 cup plus 2 Tbsp granulated sugar
- 3 large eggs, separated
- 1/2 cup all-purpose flour
- Confectioner's sugar for dusting
Instructions
- Preheat oven to 425 degrees (F). Butter and flour an 8x4-inch loaf pan. In a large heavy saucepan, combine the chocolate, butter, and water and stir over low heat until melted. Remove from heat and stir in sugar. Beat in egg yolks, one at a time, then beat in flour.
- In a bowl, beat egg whites until they hold stiff peaks. Stir one-quarter of the egg whites into the chocolate batter, then fold in the remaining whites. Pour batter into prepared loaf pan and reduce oven temperature to 350 degrees.
- Bake for 50 minutes or until a cake tester inserted into center comes out clean. Let cool in pan for 15 minutes, then turn loaf out onto rack to cool.
Sift confectioner's sugar over the top before serving.
Makes one (8x4-inch) loaf.
