Coffee Cake: Sour Cream Coffee Cake

- 3 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1 cup (firmly packed) dark brown sugar
- 2 tsp ground cinnamon
- 3/4 cup chopped walnuts
- 3/4 lb. (3 sticks) unsalted butter, softened
- 1-1/4 cups granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1-1/2 cups sour cream *
Instructions
- Preheat the oven to 325 degrees (F). Butter and flour a 12x9x2-inch baking pan. Sift together the flour, baking powder, baking soda, nutmeg and salt into a medium bowl. In a small bowl, mix together the brown sugar, cinnamon and nuts.
- In a large bowl, using an electric mixer, beat the butter and sugar until light and fluffy. Add the vanilla. Add the eggs one at a time, beating well after each addition. Beat in the sour cream. On low speed, gradually add the flour mixture, beating just until the ingredients are combined.
- Spoon one-third of the batter into the prepared pan and sprinkle one-third of the nut mixture on top. Repeat this step twice with the remaining batter and nut mixture. Bake until a toothpick inserted into the center of the cake comes out clean, about 50 minutes. Cool the cake in the pan for 10 minutes, then serve.
Serves 6 to 8
Final Comments
* Sour cream has about 20% fat, around the same as light cream...Don't try to substitute reduced or non-fat sour cream in baking recipes.
