Grilled Italian Potatoes

- 3 potatoes
- 1 pepper
- 1 onion
- 1 zucchini
- 6 Tbsp butter
- 12 Tbsp Italian dressing (or barbecue sauce)
Instructions
- Boil potatoes for 10 minutes, so they are soft but not mushy.
- Cube potatoes and place in aluminum foil (one potato per person). Add one-third of the pepper, one-third of the onion, and one-third of the zucchini. Put 2 tablespoons butter on each; add 4 tablespoons Italian dressing (or, if you prefer, use barbecue sauce).
- Wrap potatoes in aluminum foil; cook on grill for 15 to 20 minutes.
This recipe can be made for as many potatoes as you have people. Just use one-third of pepper, onion and zucchini per potato.
