"Skillet meatloaf is campfire comfort food at its finest. Sometimes, the evening can be busy helping dirty kids wash their hands and faces, so you don't have time to stand over a pan, which is when a fuss-free dish like this one comes in handy. You can add any veggies you have on hand. Serve this with a salad, Butter Herbed Rice, or Loaded Steak Fries."
List of Ingredients
â—¦ 2 pounds ground beef
â—¦ 2 eggs
â—¦ 35 butter crackers (one sleeve; such as Ritz), crushed
â—¦ 1 tablespoon seasoning salt (such as Alpine Touch)
â—¦ ½ white onion, finely chopped
â—¦ 1 tablespoon Worcestershire sauce
â—¦ ½ teaspoon freshly ground black pepper
â—¦ 2 tablespoons olive oil
â—¦ ¼ cup ketchup
Recipe
In a large bowl, mix together the ground beef, eggs, crackers, seasoning salt, onion, Worcestershire sauce, and pepper. Shape into a round loaf.
Preheat the skillet over medium heat for 1 to 2 minutes. Heat the oil for 2 to 3 minutes, until hot. Add the meatloaf. Sear each side for 3 to 5 minutes. Brush the ketchup over the top and cover. Move to low heat.
Cook, covered, for 20 to 30 minutes, or until the meat is cooked through. Remove from the heat. Let it sit for 5 to 10 minutes before serving. Drain any excess liquid.
