Pancakes in a Sack

List of Ingredients
- 1-1/2 cups all-purpose flour
- 2 tsp white or yellow cornmeal
- 2 tsp brown sugar
- 3/4 tsp salt
- 1-1/2 tsp baking soda
- 2 tsp baking powder
- .
- 2 eggs
- 2 cups milk
- Nonstick cooking spray
Instructions
- At home, mix the dry ingredients and place in a bag.
- At camp, mix all ingredients together in a bowl using a whisk, until blended but still lumpy.
- Preheat, and then spray, frying pan. Spoon batter into pan -- enough for 2, or maybe 3, pancakes. Cook until golden brown. Flip and cook other side.
Serve with maple syrup and bacon or sausage.
