White Bean Stew

List of Ingredients
- 2 Tbsp olive oil
- 2 cloves garlic, chopped
- 1 medium red onion, chopped
- 2 large tomatoes, chopped
- 1 (15-ounce) can white beans (such as cannellini, great northern or navy), drained and rinsed
- 1/2 tsp each salt and pepper
- 1 Tbsp chopped fresh rosemary
- 1 tsp crushed red pepper, or to taste
- 1/4 cup Parmesan cheese
Instructions
- Heat oil in a 2-quart pot over medium heat on camp stove. Add garlic and onion and cook, stirring, until onion is soft and translucent.
- Add tomatoes, beans, salt, pepper, rosemary and red pepper and cook until heated through.
Sprinkle with cheese and serve.
