Wilderness Spaghetti Marinara

List of Ingredients
- 2 ounces extra-virgin olive oil
- 1 small red or yellow onion, chopped
- 2 cloves fresh garlic, finely chopped
- 1 medium zucchini, diced
- 1 pkg. AlpineAire Spaghetti Marinara with Mushrooms
- A few leaves fresh basil
- 4 ounces grated Parmesan cheese
- 2 Tbsp chopped Greek olives or capers (optional)
Instructions
- In a nonstick pot, heat the olive oil; then saute the onion, garlic and zucchini for 4 to 5 minutes.
- Add the freeze-dried food and the appropriate amount of water (read directions on the package). Stir ingredients. Bring to a boil. Then cover the pot and lower heat to a simmer for 5 minutes, stirring occasionally. Turn stove off and let sit 5 more minutes. Add more water, if needed.
- Spoon into a bowl and add slivers of fresh basil and grated Parmesan cheese. Add olives or capers, if desired.
Makes 2 servings.
