    Bing Cherry Jam

    From "Ball Blue Book of Preserving" (2003 edition)


    List of Ingredients


    • 4 cups pitted, chopped Bing cherries
    • 1 package powdered pectin
    • 1/2 tsp cinnamon
    • 1/2 tsp cloves
    • 1/4 cup lemon juice
    • 1/4 cup almond liqueur
    • 4-1/2 cups sugar


    Instructions


    1. Combine all ingredients, except sugar, in a large saucepan. Bring to a boil, stirring constantly.

    2. Add sugar, stirring until dissolved. Return to a rolling boil. Boil 2 minutes, stirring constantly. Remove from heat. Skim foam, if necessary.

    3. Ladle hot jam into hot jars, leaving 1/4-inch of headspace. Adjust two-piece caps. Process 10 minutes in a boiling water canner.

      Makes 6 half-pint jars.
