Brown Sugar-Spiced Applesauce

- 3½ pounds tart, crisp apples
- 1 cup white sugar
- 1 cup brown sugar
- 2 Tbsp lemon juice
- 1¼ tsp cinnamon
- ½ tsp grated nutmeg
- 2 cups water, or apple juice
Instructions
- Peel, core, and dice apples. If desired, place apples in a food processor with some water and purée them.
- Place mixture in a large pot; simmer with enough water to cook the apples. Add the sugars, lemon juice and spices. Cook until the apples are tender. Blend, if desired -- or leave as chunky as you like it. (Be sure it's not too thick, or the finished product will either be bubbly or ooze out of the jars.)
- Ladle hot applesauce into hot jars. Process in a boiling-water bath for 20 minutes for half-pints, pints, or quarts.
Makes 4 half-pints.
