    List of Ingredients


    • 4 cups chopped cabbage
    • 2 cups chopped onion
    • 2 cups chopped green bell pepper
    • 2 cups chopped red bell pepper
    • 1/2 cup salt
    • 2 quarts water
    • 1 quart cider vinegar (5% acidity)
    • 1 cup water
    • 2 Tbsp mustard seeds
    • 2 Tbsp celery seeds
    • 1/2 tsp dried crushed red pepper


    Instructions


    1. Combine first 4 ingredients in a large non-metal container; toss well. Sprinkle with salt. Add 2 quarts water; cover and let stand 1 hour. Drain well. Rinse with cold water, and drain again.

    2. Place vegetables in a large Dutch oven; add vinegar and remaining ingredients. Bring to a boil; reduce heat and simmer, uncovered, 20 minutes, stirring occasionally.

    3. Spoon relish quickly into hot jars, filling to 1/2-inch from top. Remove air bubbles; wipe jar rims. Cover at once with metal lids, and screw on bands. Process in boiling-water bath 15 minutes. Store in refrigerator after opening.

      Makes 9 half-pints.
