    Old-Time Hot Dog Relish

    Recipe Introduction

    "Tomatoes, peaches, peppers, and onions, all mixed, sweetened with honey, and made tart with cider vinegar, give an interesting flavor profile to this old-fashioned relish."

    List of Ingredients

    â—¦ 10 large ripe tomatoes
    â—¦ 9 peaches
    â—¦ 2 red bell peppers, finely chopped
    â—¦ 3 large onions, finely chopped
    â—¦ 1 ½ cups cider vinegar
    â—¦ 1 ½ cups honey
    â—¦ 1 tablespoon pickling or fine sea salt
    â—¦ ¼ cup mixed pickling spices, store-bought or homemade

    Recipe

    Bring a large saucepan of water to a boil. Blanch the tomatoes and peaches in the water for 30 seconds. Remove and plunge into a bowl of ice water. The skins will slip off easily. Finely chop the tomatoes and peaches and combine in a large saucepan.

    Add the bell peppers, onions, cider vinegar, honey, and salt to the saucepan. Tie the pickling spices in a spice bag and add to the saucepan. Cook over medium heat for at least 2 hours, stirring occasionally, until the mixture thickens. Remove the spice bag.

    Pack the mixture into clean hot half-pint canning jars, leaving ½ inch headspace. Remove any air bubbles and seal. Process in a boiling water bath for 15 minutes. Let cool undisturbed for 12 hours. Store in a cool, dry place.

    Makes 12 half-pints
