Spiced Cherry Amaretto Jam

- 4 pounds sweet cherries
- 4½ cups sugar
- ¼ cup amaretto
- ½ cup lemon juice
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
- ¼ teaspoon ground allspice
Instructions
- Using a cherry pitter, remove the pits from the cherries. In batches, roughly chop the cherries using your food processor.
- Place the cherries into a saucepan and stir in sugar, amaretto, lemon juice, salt, and spices. Bring the mixture to a boil, then reduce heat and simmer until you've reached the desired consistency.
- Ladle the hot jam into sanitized pint jars, allowing ¼ inch of headspace. Lid the jars and process in a water bath canner for 10 minutes, adjusting for altitude.
Makes approximately six 1-pint jars
