Dutch Apple Schnapps Cheesecake

- 1-1/4 cups graham cracker crumbs
- 1/4 cup sugar
- 1/3 cup ground walnuts or pecans
- 1/3 cup butter, melted
- 1 tsp cinnamon

- Four 8-ounce packages softened cream cheese
- 1 cup sugar
- 3 Tbsp apple Schnapps (or brandy or apple juice)
- 1 tsp ground cinnamon
- 1/2 tsp vanilla
- 1/8 tsp nutmeg
- 4 eggs
- 1 cup chunky-style applesauce
- 1/4 cup whipping cream
Instructions
- For the crust: Mix all ingredients and press onto the bottom and up the sides of a 10-inch springform pan. Bake at 350º F for 10 minutes. Allow to cool while making the filling.
- For the filling: Preheat the oven to 350º F. Beat cream cheese until smooth. Gradually add sugar. Add schnapps, cinnamon, vanilla and nutmeg, and mix. Add eggs, one at a time, beating gently until combined. Stir in applesauce and cream. Pour into cooled crust. Bake about 50 minutes or until nearly set.
- Remove cheesecake from oven; sprinkle the crumb topping (recipe follows) over the cheesecake. Return cheesecake to oven and bake another 10 to 15 minutes, or until set. Cool 5 minutes. Run knife around edge of pan; loosen rim. Cool 30 minutes. Remove rim, cover and refrigerate.

CRUMB TOPPING
3/4 cup brown sugar
3/4 cup all-purpose flour
1/3 cup melted butter
1/2 tsp cinnamon
1/4 tsp nutmeg
Mix ingredients until mixture forms coarse crumbs.
