Iron Door Chili

List of Ingredients
- 1 lb. stew beef, cut into 1-inch pieces
- 2 stalks celery, chopped
- 1 medium onion, peeled and chopped
- 4 cloves garlic, peeled and chopped
- 2 Tbsp vegetable oil
- 2 Tbsp chili powder
- 1 tsp dried oregano leaves
- 1/4 tsp ground cinnamon
- 4 cups cooked pinto beans with cooking liquid (or two 16-ounce cans)
- 1 (29-ounce) can chopped tomatoes
- One (4-ounce) can chopped green chilies
- Salt to taste

- Chopped onion and grated cheese, optional
Instructions
- In a large stew pot over medium-high heat, cook beef, celery, onion and garlic in oil for 5 minutes. Add chili powder, oregano and cinnamon, and cook 1 minute longer.
- Add beans, tomatoes and green chilies and bring all ingredients to a boil. Cover, reduce heat to low and simmer for 45 minutes, stirring occasionally.
Serve hot with chopped onion and grated cheese, if desired.
