Rhinestone Cowboy Chili

List of Ingredients
- 1/2 lb. dry pinto beans
- 5 cups canned, peeled tomatoes
- 1 lb. green bell peppers, seeded and coarsely chopped
- 1-1/2 lbs. onions, peeled and coarsely chopped
- 2 garlic cloves, crushed
- 1-1/2 Tbsp olive oil
- 1/2 cup parsley, minced
- 2-1/2 lbs. ground beef
- 1 lb. ground lean pork
- 1/3 cup chili powder
- 2 Tbsp salt
- 1-1/2 tsp pepper
- 1-1/2 tsp cumin seeds
Instructions
- Soak pinto beans overnight in cold water in a large chili pot. Cover beans with fresh cold water and simmer for 2 hours.
- Saute green bell peppers, onions, garlic, and parsley in olive oil. Add pork and hamburger; brown. Add spices and cook for 10 minutes. Combine with beans and cook, covered, for one hour.
- Uncover and cook for 30 minutes longer (add water if needed).
Yield: 4 quarts
