Habanero Pesto

List of Ingredients
- 1 head of garlic, cloves peeled and any hard stem bits removed
- 4 to 6 packed cups of basil
- 2 fresh habanero chiles, stems, seeds and ribs removed
- 1/3 cup extra-virgin olive oil
- 1/3 cup freshly grated Parmesan cheese
- 2 Tbsp pine nuts
- 3/4 cup toasted sunflower seeds
Instructions
- Buzz the garlic cloves in a food processor until finely chopped. Add the basil and process until a paste is formed. Add the chiles, olive oil, cheese, pine nuts and sunflower seeds. Buzz until incorporated.
You should have a medium-grained paste. Serve with any kind of bread, pasta or rice. If you want more assertive heat, add another habanero chile.
Makes about 1 cup.
