Jalapeño Sauce

"This sauce has a fresh flavor and intense heat. You could substitute chiles de agua (water chiles), New Mexico red chiles, or poblanos for the jalapeños."
List of Ingredients
â—¦ 12 fresh jalapeño chiles, stemmed and cut into chunks
â—¦ 1 medium yellow onion, peeled
â—¦ 2 cups distilled white vinegar
â—¦ 1 cup water
â—¦ 2 cloves garlic, peeled
â—¦ Juice of 1 lime
â—¦ Pinch of salt
â—¦ ½ cup fresh cilantro leaves
Recipe
Combine all of the ingredients in a blender and purée.
Transfer the purée to a nonreactive saucepan, bring to a boil, and then lower the heat and simmer for 10 minutes.
Let cool, then pour into bottles. You can eat it right away or place in sealed bottles and store for future use.
